If you haven’t tasted żurek, you don’t know much about Polish cuisine. It is uniquely Polish soup made with white sausage and smoked meat, always served with hard boiled eggs. And it is an obligatory dish on the Polish Easter table!
But its basic ingredient is rye flavour bread starter (zakwas) that needs to be left to ferment in seasoned water for about 5 days. Sounds weird? Well, wait until you try this thick, creamy and delightfully sour soup!
Occassionally, it is served in a fancy way, in a round loaf of bread hollowed into a bowl.
